The mind behind our food concept
Antonino Acqua is the chef who gives Elgus’s cuisine its soul.
His philosophy is simple, and that’s exactly why it’s so profound: to respect the ingredients and let the flavours speak for themselves. Years of cooking in Italy and abroad have honed his technique, but it’s his connection to the local area that inspires every dish.

As you step into the new breakfast room, you’ll immediately notice two things: the abundance of incredibly tempting food and the beautiful portrait of Grandpa Augusto on the wall. Then you’ll see the crackling fire in the fireplace, which makes the room feel extra cosy. It’s time to take a plate, fill it with the finest local delicacies, and then enjoy them in the modern dining room next door.
Comfortable sofas, the perfect atmosphere, a good chat: our bistro and lounge bar is the ideal place at any time of day: a coffee after lunch, a snack when hunger suddenly strikes, or a light lunch before setting off to explore the plateau. When you return from your walk or a visit to Rovereto in the afternoon, tired but happy, you can look forward to an excellent afternoon snack from 4.30 p.m. to 5.30 p.m. Sometimes, a slice of cake is just the thing to recharge your batteries so you can make the most of the rest of the afternoon.
